There’s nothing more delicious that a chewy Anzac biscuit to snack on when the 3pm munchies hit! So to give you the best of both worlds, we reached out to the girls at KIC for Steph Claire Smith’s ultimate healthy Anzac biscuit recipe. Enjoy!

Keep It Cleaner Anzac biscuits
Ingredients:
100grams rolled oats
40grams spelt flour
40grams oat flour
20 grams almond meal
85grams desiccated coconut
100 grams coconut sugar
1/2 teaspoon bicarbonate soda
2 tablespoons hot water
100grams coconut oil
1 tablespoon maple syrup
Method:
Step 1: Preheat oven to 175°C (fan-forced) then combine all dry ingredients (besides the bicarb soda) into a bowl and mix well.
Step 2: Melt the coconut oil, then add the maple syrup to a small bowl. Stir until combined.
Step 3: In a small bowl, dissolve the bicarbonate soda into the hot water and add to the coconut oil and maple mixture.
Step 4: Add the wet mixture to the dry ingredients and stir until everything is combined. Refrigerate the mixture for approximately 10 minutes
Step 5: Using your hands, roll the mixture into small balls, then place on a baking tray and flatten (approximately 1 – 2 tablespoons for each cookie)
Step 5: Bake for approximately 15-20 minutes, or until golden. Remove the biscuits from the oven and let them cool for around 10 minutes. Serve and enjoy!
